I wish I could express to you in words how excited I get about nutrition. When I learn something new about food and the body, even if it challenges my current belief structure, it feels like fireworks are going off in my brain. I get all hyped up and I talk 1000 miles per hour.
Some might call it a quirk, I call it passion. Either way, I fully embrace it.
I’ve been craving some structure in my life. I’ve been eating super intuitively for a few months now and it was totally working for me. My weight was as consistent as it had ever been and I felt pretty good. But me being me, I needed some chaos in my life!
(Here are the real reasons):
My skin was still a little *meh* and I was having a lot of anxiety. I did an internal deep dive and realized that as I was intuitively eating, I really wasn’t eating enough, and what I was eating was a TON of carbs because your girl here was putting life and responsibilities first and being lazy about cooking.
So that was that, I needed change and I decided to go Keto last Thursday.
My boyfriend went Keto a few weeks ago and he has loved it. He feels great, he has insane amounts of energy, and he’s just one of those people who enjoys the process. Good on him.
I personally need to see change within like 72 hours or I’ll talk myself out of it.
But I’ll be damned if I didn’t see changes within 48 hours.
My face softened and I just felt good. I slept a TON. It was like my body went through a little healing period.
Speaking of periods… I was on mine during this shift to Keto and I absolutely think that it made me have way less symptoms.
I am convinced and you can now refer to me as Keto Queen indefinitely.

oh hey guys, so i’m trying out #keto @callmeshitto made the leap a few weeks ago and he convinced me to commit to at least a week, but now only 3 days later i can tell i’m going to stick with this for a while. i had gotten to where i was relying SO much on sugary carbs to keep me full and not eating enough meals throughout the day, but with keto i’ve been eating tons of veggies and i feel much better but just as full. i’ve been really mindful about eating more meals and drinking enough water 💧🌿 diets do not have to feel like a fad and they don’t have to be stressful!! you can customize everything to your body, because healthy looks different on everyone! your keto and my keto might be within the same dietary guidelines, but look totally different – so here’s what keto looks like for me: • avoiding lectins as much as possible – @drstevengundry • the only dairy i’m consuming is organic grass fed amish butter (ive talked about this before in my story – but i order butter from a farm in florida) • small amount of starches like sweet potato or quinoa for balancing hormones – the best way to do this is pay attention to portion sizes and to stay within the right carb range just make sure that is the main source of your carbs for the day • not counting macros!! i’ve been an intuitive eater for my own sanity for a long time now, and i quickly realized that if i count calories my old tendencies to fall back into a pattern of food guilt creep back. i’m just keeping a general idea of my carbs and protein and being mindful of what i eat! • i think people are under the impression that keto means a ton of meat, but the way to figure out your ideal daily meat consumption is 0.7 x YOUR WEIGHT = how many grams of meat you should eat (MAX) per day – so my protein intake isn’t very high and i like it that way • major focus on veggies (!!!!) • some berries & grapefruit • nuts nuts nuts today i’m detoxing so hard from sugar, which is a really good thing for me. i’ve always struggled with sugar, as it is a constant craving of mine as well as something i am very reactive to – i’m so pumped to see what this does for my skin, psoriasis, and hormones 🌸 plenty of updates to come –
- I’m playing around with coconut for now. I have been allergic to coconut in the past and just recently started incorporating it back into my life. My allergic reaction to it was some blisters on my face and a rash so I want to do Keto for a little without coconut. Once my body tidies itself up a bit and gets into full ketosis, I’ll add in some coconut to see if it affects my body at all. Am I constantly experimenting with my own body? Absolutely. Will this ever change? Probably not.
- Carb Cycling – After reading Leanne Vogel’s E-Book, Fat Fueled, I plan to do 30 days straight of Keto to get my body into ~Ketosis~ but then I will be carb cycling every 3-5 days. Having some glucose is important for the body for hormones, especially for the thyroid. *Carb cycling looks a bit different for men so make sure you do your research.*
I’m so attracted to this way of eating right now, because it essentially takes intuitive eating and gives it more of a structure, and it really is exactly what I have been asking for.

HA JUST KIDDING I GOTTA HIT YOU WITH SOME FACTS FIRST
Rewind to my freshman year of college… My hair was falling out by the handfuls from sleepless nights and inconsistent diet. Needless to say, I was desperate to have my bouncy, beautiful curls back. I had also recently taken my acrylic nails off after many years of wearing them (*sigh* I still miss them dearly, but alas will never go back).
Essentially, I was the perfect candidate for some major collagen therapy, ASAP.
When I started shifting my lifestyle, collagen was one of the first health foods that I came across, and it quickly became a staple in my diet.
I personally either enjoy collagen in my matcha or in a morning smoothie, but look at me go, as I incorporated it into this recipe!!
Food Blogger, Rachel Mansfield also has a recipe for a Paleo Bread that includes collagen. Get her recipe here!
Collagen contains about 6-7 grams of protein per tablespoon.
During my current Keto adventure, it will be great for helping me to stay full and adds some extra protein into my diet.
I personally like to know where my food comes from, so here’s some info on that for you fellow nerds out there –
“Our Beef Gelatin and Collagen Peptides are made from pasture-raised bovine hides. The hides are first cleaned and soaked in hot water to remove the fat. They are then soaked in an alkaline or acid solution to facilitate the release of collagen. After, the hides are cooked in water with a temperature that fluctuates up to 190 degrees, to extract the collagen from the hides. Unlike the Beef Gelatin, the Collagen Peptides are broken down further with an enzyme treatment. The final steps are evaporation and milling, which results in the powder form of collagen or gelatin. The process does not involve high heat and results in a very fresh tasting product.” – Vital Proteins
Low Carb, Paleo, Gluten Free Collagen Lemon Squares
This Paleo, gluten free, Keto-friendly snack will help to cut out those sugar cravings and up your healthy fat intake!
For the Crust:
- 6 tbsp butter grass fed
- 2 cups almond flour fine
- 1/3 cup monk fruit sugar granulated
- 1 tbsp lemon zest
For the Filling:
- 1/4 cup butter
- 1/4 cup ghee grass fed
- 1/2 cup monk fruit sugar granulated
- 1/2 cup fresh lemon juice
- 1/4 cup lemon zest
- 6 egg yolks
- 2 tbsp Vital Proteins Gelatin
For the Drizzle:
- 1 scoop Vital Proteins Mixed Berry Collagen Peptides
- 2 tbsp butter grass fed
It will make your job a lot easier to line your square pan with parchment paper so that you can lift the bars right out once they're done, so go ahead and do that first.
Preheat oven to 350 degrees (F)
For the Crust:
Melt the butter in a small saucepan.
Combine the almond flour, monk fruit sugar, and lemon zest.
Mix until it forms a dough.
Press the dough evenly along the bottom of a square pan.
Bake at 350 degrees (F) for 15 minutes.
Remove and let cool.
For the Filling:
Combine monk fruit sugar, lemon juice, and lemon zest in a bowl.
Melt the butter in a saucepan on low heat.
Remove from heat and whisk in monk fruit sugar, lemon juice, and lemon zest until dissolved.
Whisk in the egg yolks and return to the stove over medium heat (about 150 degrees).
*AT THIS POINT YOU WILL HAVE TO MOVE FAST SO BE PREPARED FOR THE NEXT STEPS OR YOUR CUSTARD WILL TURN TO LEMON FLAVORED SCRAMBLED EGGS REAL QUICK*
Whisk continually until the curd starts to thicken.
Remove from the heat and strain into a small bowl.
Whisk in the the gelatin until dissolved and smooth.
Pour the filling over the pre-baked crust and spread out evenly to the edges of the pan.
For the Drizzle
Melt butter in a small saucpan
Remove from heat and stir in 1 scoop of the Vital Proteins Mixed Berry Collagen Peptides
It will not combine fully and should create a gooey texture - Using a fork, drizzle the collagen on top of the lemon custard in whatever design you want
Bake the bars at 350 degrees (F) for 15 minutes.
Remove and cool.
Cut into squares.
*For granulated monk fruit sugar I use Lakanto
